Ingredients:

  • 14 oz (400g) firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 medium carrot, julienned
  • 3 green onions, chopped
  • 2 cups cooked jasmine rice
  • Sesame seeds for garnish
  • Optional: hot sauce or chili flakes for heat

Instructions:

  1. Marinate the Tofu:
  2. In a bowl, combine the cubed tofu, soy sauce, and half of the sesame oil. Let it marinate for about 10 minutes.

  3. Cook the Tofu:
  4. Heat a non-stick skillet or wok over medium-high heat. Add the marinated tofu and sauté for 5-7 minutes until golden brown. Remove and set aside.

  5. Sauté the Aromatics:
  6. In the same skillet, add the remaining sesame oil, garlic, and ginger. Sauté for 1-2 minutes until fragrant.

  7. Add Vegetables:
  8. Toss in the red bell pepper, broccoli, snap peas, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

  9. Combine and Heat Through:
  10. Return the tofu to the skillet, adding the chopped green onions. Stir everything together and cook for an additional 2-3 minutes to heat through.

  11. Serve:
  12. Spoon the tofu stir-fry over bowls of jasmine rice. Garnish with sesame seeds and, if desired, a drizzle of hot sauce or a sprinkle of chili flakes.
