Ingredients:
- 14 oz (400g) firm tofu, drained and cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 medium carrot, julienned
- 3 green onions, chopped
- 2 cups cooked jasmine rice
- Sesame seeds for garnish
- Optional: hot sauce or chili flakes for heat

In a bowl, combine the cubed tofu, soy sauce, and half of the sesame oil. Let it marinate for about 10 minutes.
Heat a non-stick skillet or wok over medium-high heat. Add the marinated tofu and sauté for 5-7 minutes until golden brown. Remove and set aside.
In the same skillet, add the remaining sesame oil, garlic, and ginger. Sauté for 1-2 minutes until fragrant.
Toss in the red bell pepper, broccoli, snap peas, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
Return the tofu to the skillet, adding the chopped green onions. Stir everything together and cook for an additional 2-3 minutes to heat through.
Spoon the tofu stir-fry over bowls of jasmine rice. Garnish with sesame seeds and, if desired, a drizzle of hot sauce or a sprinkle of chili flakes.
